Leek n Lentil soup!
I modified a recipe I found on foodgawker. After rinsing out the leeks and lentils, I sauteed the chopped up leeks in a pot with olive oil and cloves of garlic. Then I added in some chicken stock and water and let it simmer. About 10 minutes before i was going to take it off the stove, I added in the lentils. I put it all in the blender and voila - my first attempt at leek soup.
It was pretty delicious and I realize that I made way too much. I made this on Tuesday and I’m still eating it. I used three large leeks and a cup of lentils. I’d suggest making a much smaller amount if it’s just for one person but I have a big eye when I’m cooking.
